Baked Salmon with Garlic Spinach

Ingredients

  • 2 salmon fillets
  • 2 tbsp olive oil (divided)
  • 2 cloves garlic (minced)
  • 3 cups fresh spinach
  • Juice of half a lemon
  • Salt and black pepper to taste
  • Optional: fresh parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Place salmon fillets on a baking tray lined with parchment paper. Drizzle with 1 tbsp olive oil, season with salt, pepper, and a squeeze of lemon juice.
  3. Bake for 15–18 minutes, or until the salmon flakes easily with a fork.
  4. While the salmon bakes, heat 1 tbsp olive oil in a pan over medium heat. Add garlic and sauté until fragrant.
  5. Add spinach and cook until just wilted (2–3 minutes). Season lightly with salt and pepper.
  6. Plate the salmon with garlic spinach on the side. Garnish with parsley if desired.
