Lentil Vegetable Soup

Ingredients

  • 1 cup dried lentils (rinsed)
  • 1 tbsp olive oil
  • 1 onion (diced)
  • 2 carrots (chopped)
  • 2 celery stalks (chopped)
  • 3 cloves garlic (minced)
  • 1 can diced tomatoes (14 oz)
  • 6 cups vegetable broth
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and black pepper to taste
  • 2 cups spinach or kale (optional, added at the end)

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onion, carrots, and celery until softened.
  2. Add garlic, cumin, and paprika, stirring for 1 minute.
  3. Add lentils, diced tomatoes, and vegetable broth. Bring to a boil.
  4. Reduce heat, cover, and let simmer for 30–35 minutes until lentils are tender.
  5. Stir in spinach or kale at the end, cooking just until wilted.
  6. Taste and adjust seasoning with salt and pepper. Serve warm.
